Greek Salad with 2 Kinds of Tomatoes & Feta Cheese

Heirloom tomatoes, cherry tomatoes, red onion, Kalamata olives and feta – delicious.
Ingredients:
  • 1-2 heirloom tomatoes
  • 1/2 pint mixed cherry tomatoes
  • 1 cucumber
  • peeled (if desired)
  • 1/4 cup thinly sliced red onion
  • 1/3 cup pitted and sliced Kalamata olives
  • 6 ounces crumbled sheep milk feta cheese
  • 2 TBS fresh lemon juice (or 2 TBS Balsamic vinegar)
  • 2 TBS extra virgin olive oil
  • ½ tsp dried oregano or 2 tsp fresh
  • 1 clove of finely minced garlic
  • Sea salt
Directions:
  1. Put the thinly sliced red onions in a small bowl and cover with water and add an ice cube. Let soak for 10-20 minutes to reduce the sharpness of the raw onion.
  2. Take the core out of the tomato(es) and chop it into bite-sized pieces.
  3. Cut the cherry tomatoes in half.
  4. Peel the cucumber (if desired) and then chop in half the long way and then into 1/4 inch size pieces.
  5. In a large salad bowl combine the cucumbers
  6. tomatoes
  7. and Kalamata olives. Drain the onion and add it too.

Gently toss and add the following:

2 TSP freshly squeezed lemon juice (or 2 TBS Balsamic vinegar)
2 TBS extra virgin olive oil
½ tsp dried oregano
1 clove of finely minced garlic
Sea salt

Toss again and then top with 6 oz crumbled sheep’s milk feta cheese.
