Garlic Scape Pesto

Gluten Free & Vegetarian. Wash 4-5 scapes, then cut 2 inches off of the very end of the flower bud.
Ingredients:
  • 4-5 garlic scapes
  • ½ cup extra virgin olive oil
  • ½ cup freshly grated Parmesan cheese
  • 1 tsp fresh lemon juice
Directions:
  1. Wash 4-5 scapes
  2. then cut 2 inches off of the very end of the flower bud.
  3. Chop the scapes into pieces
  4. then add to a blender container.
  5. Puree with ½ cup extra virgin olive oil in a blender until smooth.
  6. Then add ½ cup freshly grated Parmesan cheese and 1 tsp fresh lemon juice.
  7. Season to taste with sea salt and black pepper.
  8. Serve on bread
  9. crackers
  10. or toss with pasta.
