Spaghetti with Summer Vegetables

Ingredients:
  • 8 ounces spaghetti
  • ¼ cup olive oil
  • divided
  • ½ onion
  • sliced
  • 1 zucchini
  • seeded and sliced
  • 1 summer squash
  • seeded and sliced
  • 3 red kale leaves
  • stemmed and chopped
  • 5 sugar snap peas
  • halved
  • 1 tomato
  • cut in ½” dice
  • 4 cloves garlic
  • sliced thin
Directions:
  1. 1. In a large saucepan
  2. bring 1 gallon of water to a boil to cook the pasta. Add salt to the water and start cooking the pasta
  3. moving every 2-3 minutes. When tender
  4. drain saving a little of the pasta water. Set aside.
  5. 2. Add half of the oil and the onions to a sauté pan over medium heat. Cook
  6. stirring often until the onions start to brown
  7. 2-3 minutes.
  8. 3. Stir in the zucchini and summer squash and cook for another minute. Season with a pinch of salt and taste.
  9. 4. Add the kale
  10. peas
  11. tomatoes
  12. garlic and the remaining 2 Tablespoons of oil. Season with a bit more salt and pepper
  13. if needed
  14. and cook for 2 more minutes.
  15. 5. Gently stir the cooked pasta into the vegetables
  16. adding a little of the pasta water if needed to moisten. Toss to combine and serve immediately.
