Sautéed Chard & Bok Choy Stir-Fry with Scallion-Garlic Sauce

Gluten Free, Vegetarian, Vegan

Ingredients:
  • 1 bunch rainbow chard
  • chopped (stems and leaves separated)
  • 1 bunch baby bok choy
  • halved or quartered
  • 2 scallions
  • thinly sliced
  • 2 cloves garlic
  • minced
  • 1 tbsp soy sauce
  • 1 tsp sesame oil or olive oil
  • Optional: red pepper flakes
  • sesame seeds
  • cooked rice or noodles
Directions:
  1. Heat oil in a large pan over medium heat.
  2. Add chopped chard stems and bok choy. Cook 2–3 min until slightly softened.
  3. Add scallions
  4. garlic
  5. and chard leaves. Sauté another 2–3 min until wilted and fragrant.
  6. Drizzle in soy sauce and sesame oil. Toss to coat.
  7. Serve warm over rice or noodles
  8. topped with sesame seeds or chili flakes.
