Roasted Kohlrabi with Parmesan Cheese

Kohlrabi is sometimes referred to as a turnip cabbage. It is in the same family as broccoli, cabbage, cauliflower, and brussel sprouts.
Ingredients:

  • cabbage
  • cauliflower
  • and brussel sprouts. The flavor palate is light
  • a little mix in between cucumber and broccoli.
Directions:
  1. Peel your kohlrabi and cut into 1-inch wedges
  2. toss with 2 tablespoons olive oil
  3. 3/4 teaspoon kosher salt and a pinch of cayenne on a rimmed baking sheet.
  4. Roast at 450 degrees F
  5. stirring every 10 minutes
  6. until tender and golden
  7. about 30 minutes.
  8. Toss with 3 tablespoons parmesan and 1 tablespoon chopped parsley.
