Chilled Carrot & Turnip Slaw with Dill Dressing

Fresh, crunchy, and herby — this slaw makes a perfect side for grilled food, sandwiches, or as a topping for tacos.
Ingredients:
  • 3–4 teenage carrots (Four Elements Farm)
  • shredded or julienned
  • 2–3 hakurei turnips (Wobbly Cart Farm)
  • shredded or thinly sliced
  • 1 Tbsp fresh dill
  • chopped (Rising River Farm)
  • 1 Tbsp olive oil
  • 1 Tbsp apple cider vinegar or lemon juice
  • ½ tsp honey or maple syrup (optional)
  • Salt and pepper to taste
Directions:
  1. In a medium bowl
  2. combine shredded carrots and turnips.
  3. In a small jar or bowl
  4. whisk together oil
  5. vinegar
  6. dill
  7. honey (if using)
  8. salt
  9. and pepper.
  10. Pour dressing over vegetables and toss to coat. Chill for 10–15 minutes before serving.
