Apple Coleslaw

Crisp, colorful, and bursting with flavor, this apple coleslaw is a refreshing twist on a classic.
Ingredients:
  • 3 cups chopped cabbage
  • 2 unpeeled apples
  • cored and chopped (you can substitute a tart Granny Smith apple for one of the apples if desired)
  • 1 carrot
  • grated
  • ½ cup finely chopped red bell pepper 2 green onions
  • finely chopped
  • 1 handful of raisins
  • ⅓ cup mayonnaise
  • 2 tbsp and 2 tsp honey
  • 2 tbsp apple cider vinegar
  • or to taste
Directions:
  1. Chop cabbage
  2. add 1 tsp salt
  3. and then let sit in a colander for an hour
  4. to draw out excess moisture. Chop apples
  5. red bell pepper and green onions
  6. and grate the carrot.
  7. Combine cabbage
  8. apples
  9. carrot
  10. red bell pepper
  11. raisins and green onions in a large bowl.
  12. Mix together mayonnaise
  13. honey
  14. and vinegar in a small bowl. Pour dressing over cabbage mixture; mix until evenly coated.
  15. Refrigerate for an hour or two before serving
  16. to allow flavors to mix
