Marinated Heirloom Tomatoes

A celebration of summer’s finest, this simple yet stunning dish features juicy, colorful heirloom tomatoes marinated in a vibrant blend of olive oil, garlic, oregano and a splash of tangy vinegar.
Ingredients:
  • 3 heirloom tomatoes medium to large
  • 4 cloves garlic
  • 1 cup olive oil extra virgin
  • ½ cup + 4 teaspoons red wine vinegar
  • ½ teaspoon dried oregano
  • kosher salt to taste
  • black pepper to taste
Directions:
  1. Create the vinaigrette. Mince the garlic
  2. add it to a small bowl
  3. then add the vinegar
  4. olive oil
  5. salt
  6. pepper
  7. and oregano. Whisk together the marinade ingredients until they are emulsified.
  8. Slice the tomatoes and layer them in the ceramic pie plate
  9. or glass or ceramic baking dish.
  10. Pour the marinade over the tomatoes. Cover with a lid
  11. plastic wrap
  12. or a wax food wrap
  13. and move them to the fridge.
  14. Marinate for 2 to 24 hours
  15. then serve.
