Chicken & Broccoli Stir-fry

Ingredients:
  • ¼ cup soy sauce
  • ½ cup water
  • 1 teaspoon sugar
  • 1 Tablespoon
  • cornstarch
  • 4 Tablespoons
  • Canola oil
  • 4 boneless
  • skinless
  • chicken thighs
  • cut
  • into strips
  • ½ onion
  • sliced
  • 1 cup (4-6 small to
  • medium) carrots
  • sliced
  • 3 cloves garlic
  • sliced or minced
  • 4 cups broccoli
  • florets
  • 4 leaves Kale
  • stemmed and cut
  • into about 2 inch
  • pieces
Directions:
  1. 1. Combine the soy sauce
  2. water
  3. sugar
  4. and cornstarch in a small bowl and set aside.
  5. 2. Place a skillet or sauté pan over
  6. high heat. When it’s hot
  7. add the
  8. oil and the chicken in a single
  9. layer. Cook the chicken without
  10. turning for about 2 minutes to
  11. brown.
  12. 3. Turn and brown the other side.
  13. 4. Once the chicken browns add the
  14. onions and carrots and stir
  15. constantly until the onions are
  16. translucent (about 2 minutes). Add
  17. the garlic and continue stirring for
  18. about 30 seconds or until the
  19. garlic is very fragrant.
  20. 5. Add the broccoli
  21. and kale and
  22. continue stir-frying for two more
  23. minutes or until as tender as you
  24. like it. Re-stir the soy sauce
  25. mixture and pour over the
  26. vegetables and chicken in the pan.
  27. Continue stirring until the sauce
  28. thickens (about 1 minute). Serve
  29. immediately.
